Pastrami Shakshouka

Shakshouka is a middle eastern famous one-dish recipe. Shakshouka has 2 main ingredients; eggs and tomatoes. However we enjoy adding whatever available in the fridge like sausage, veggies or cooked ground beef. Today I am making it with pastrami, a favourite cold cut in Egypt ,usually served with poached eggs for breakfast.
Try Shakshouka for breakfast, brunch or even meatless dinner. It’s worth a try 😉

Pastrami Shakshouka
To make Shashouka:
Melt 1 – 2 tablespoon(s) butter with one tablespoon olive oil in a skillet, add about 6 – 8 pastrami pieces and fry on both sides.
Add 3/4 cup passata, season with salt and freshly ground pepper, let simmer for few minutes till sauce thickens.
Crack 4 organic free run eggs over the sauce, cover and let cook for few minutes till cooked .
Season eggs with freshly ground pepper if desired
Serve with rustic bread

Vanilla Yogurt With Fruits And Granola

This recipe is so flexible, so feel free to add as much fruits as you wish

1 container vanilla yogurt (I use Krema) http://www.olympicdairy.com/products-greekstyleyogurt

1 Tbsp flaxmeal
1 Tbsp maple syrup

2 Tbsp  granola with Semisweet chocolate (if not available mix 2 Tbsp granola with a couple tsp of semi sweet chocolate chips)

pear cut into cubes
sliced strawberries
blueberries

Start with yogurt , top with fruits

Mix granola and flax meal.Add  over fruits

Drizzle with maple syrup and serve.

Open faced Egg & Cheese Sandwich

This recipe calls for za’atar, za’atatr is a middle eastern spice, used a lot in Arab cuisine.  You can find Zaa’tar in middle eastern super markets.

To make Open faced Egg & Cheese Sandwich:

Spread a generous amount of feta cheese on your favorite crisp bread (I use Wholegrain Rye from Ryvita) http://www.ryvita.co.uk/products/crispbread/multigrain-crispbread

Top with slices of  boiled egg , a teaspoon of Za’atar and garnish with a sliced cherry tomato.

Cottage Cheese With Ancient Cereal

1/2 C Cottage cheese

1 sliced mandarine

2 Tbsp cereal (I uses Ancient Grain cereal) photo below

1 Tbsp crushed pistachios

1 Tbsp unpasteurized liquid honey

In a bowl,add cottage cheese, arrange mandarin slices around cheese.

Top with cereal ,garnish with pistachios.

Drizzle honey on top.
