Rolled Crepes With Peanut Butter & Molasses


I used to make this recipe  using regular all purpose flour. Now, I just substitute a cup of einkorn for a cup of AP flour. Results are almost the same.  Plus,the great feeling of  treating your body right,while still eating crepes !

To make Rolled Crepes With Peanut Butter & Molasses you’ll need

1 C einkorn flour.

1 1/2 C organic 2%  milk.

1 large free run egg.

1 tsp pure vanilla extract.

2 Tbsp butter.

Pinch of salt.


For each crepe you’ll need:

1 Tbsp Natural peanut butter (I used Kraft’s All Natural Peanut Butter).

1 tsp fancy molasses.


Mix flour and salt. Add milk , egg , and vanilla extract . Stir to combine.

Melt butter in a non stick pan, stir to batter . (You will not need to add more butter to grease the pan for cooking the crepes).

Ladle 1/3 C of batter into pan, cook 1 minute per side. Transfer cooked crepes in a single layer on kitchen paper  to cool.

Spread 1 Tbsp peanut butter ,drizzle 1 tsp molasses.

Fold 2 sides of crepes,then roll. Serve with fruits.

Great to pack in lunch box with fresh fruits, so easy for kids to hold like a sandwich.
