Spelt Buckwheat Kefir Pancakes


These pancakes are not high in gluten, more than half the amount of  flour used in this recipe (buckwheat and oatmeal* ) is gluten free

I also  added kefir beside milk to the batter. Kefir is known for its digestion benefits,as it supplies the body with useful bacteria and protein.

To make Spelt Buckwheat Kefir Pancakes you will need:

1/2 C Whole spelt flour

1/2 C Buckwheat flour

1/2 c Instant oatmeal

1/2 C coconut unsweetened flakes

1 Tvsp baking powder

1 C 2% milk

1 C kefir

1 large Egg

1 Tbsp melted butter

More butter and maple syrup to serve.

1 Tsp Vanilla

Mix flours ,oatmeal,coconut flakes and baking powder.

In a separate bowl mix milk,kefir,egg and vanilla.

Add liquid ingredients to flour mixture and mix well.

Melt butter in a non stick pan.

Add butter to pancake batter.

Pour 1/4 C of batter to pan ,you won’t need to add more butter to pan for cooking the pancakes.

Serve with butter and maple syrup.

*Uncontaminated oatmeal
